| First course is served in a duck bowl (notice the male/female duck heads). It's raw quail egg and squid with bonito flakes in light soy sauce. The textures of both the egg and squid are quite sticky, but full of umami. Also notice the yellow leaf on the plate, a nod to autumn. |
